Ingredients

  • - 0.5 pound white fish (catfish or tilapia), cut into chunks
  • - 2 cups water
  • - 1 tablespoon tamarind paste
  • - 1 teaspoon fish sauce
  • - 1 teaspoon sugar
  • - 1/2 cup bean sprouts
  • - 1/2 tomato, sliced
  • - 1/2 cup pineapple chunks
  • - 1 stalk lemongrass, bruised
  • - 1 tablespoon chopped herbs (culantro or Thai basil)

Instructions

    Boil water with lemongrass and tamarind paste for 5 minutes.

    Add fish sauce, sugar, pineapple, and tomato

    simmer for 5 minutes.

    Add fish chunks and cook until just done, about 3–4 minutes.

    Add bean sprouts and herbs. Serve hot.
