Ingredients

  • - 1/2 cup of uncooked rice
  • - 2 teaspoons of dashi stock powder
  • - 225g of skinless, boneless chicken thigh
  • - salt and pepper to taste
  • - 6 cloves of garlic
  • - 2 eggs
  • - 2/3 cup of chopped onion
  • - 2 tablespoons of soy sauce
  • - 2 tablespoons of mirin
  • - corn (optional)
  • - carrots (optional)
  • - scallion (for garnish)

Instructions

  1. 1.
    Make 2 servings of rice (½ cup uncooked) with a sprinkle of dashi stock powder mixed in with the water used to make the rice. This boosts the flavor of the rice immensely.

    Cut 8 oz of chicken thigh into bite sized pieces and season with salt and pepper.
  3. 3.
    In a skillet, melt the butter and sauté the garlic in it. Spray cooking oil and sauté the onion, carrots, and corn for about 2-3 minutes

    When the vegetables and chicken are done cooking, mix in the rice and stir thoroughly.
  5. 5.
    Once mixed through, crack in an egg and mix in with the rice.
  6. 6.
    Garnish with green onions and enjoy your Japanese garlic fried rice!
